I've played quite lots of game so it's hard for to choose just 1 game. I mostly RPG though so I would say Witcher 3 and Dragon Age Origins are my two best choices.

Baldur's Gate 2 (with the expansion Throne of bhaal); go get it, the enhanced version released recently works also on recent OS with new features. It's an amazing experience and is still above any other WRPG. I still replay it once a year and discover new quests/things/lore.
